Cracked Peppercorn Steak:
4 oz. Beef tenderloin <Filet Mignon> 1 tsp. coarsely ground peppercorns 2 oz. fat free evaporated milk 1/4 cup unsweetened apple juice salt <to taste> Black pepper <to taste> Olive Oil cooking spray Pre heat oven 350 F. Spray baking sheet and set aside. Place peppercorns in a medium sized bowl and dip tenderloin into the mixture. Pre heat a skillet to medium-high and spray with cooking spray. Place the tenderloins in the skillet, cooking approximately 3-5 minutesper side before removing to the baking sheet. Cook in oven for approximately 5 minutes. Reduce skillet heat to low and add apple juice. Heat for about 1 minute, add milk, turn heat to high stiring frequently until liquid boils. Reduce heat and simmer for 2-3 minutes, or until liquid begins to thicken. Top tenderloin with sauce and serve. Salmon Ceviche in Avacado Cups 1/2 cup grape fruit juice 1/2 cup lime juice 1/2 pound sushi grade salmon fillet 1/2 onion diced 1 tomatoe roughly chopped 1/4 cup chopped fresh cilantro 1 avacado Combine first seven ingredients in a medium bowl, cover and chill for at least one hour or until salmon turns opaque. Cut avacado in 1/2 and discard pit. Remove skin by sliding a small spoon between skin and flesh. To serve, drain most of the liquid from ceviche mixture, then divide evenly into avacado bowls. Tin Foil Chicken 1 pound boneless/skinless chicken breast or thigh meat cut into chunks 4 tbsp chopped ginger 2 cloves garlic chopped 1 tbsp chopped cilantro 2 green onions sliced thin 1 tsp soy sauce 1 tbsp olive oil Toss all ingredients in large bowl, spoon 2-3 tbsps of liquid and 1-2 chunks of chicken into a 5x5 inch square of tin foil. Fold down from corner to corner to make a triangle, then fold securely along each side. Continue making packets until all the chicken and liquid is used. Turn gas grill to high heat and place directly on the grill. Flip packets after 6-7 minutes, each should take 15 minutes to cook. Packets ready when they sizzle and juices bubble from the seams
