Nothing fancy here, but if you have a hard (or long) time getting eggs down in the morning this should do the trick
Ingrdients: (makes 2 pancakes) 10 egg whites 1 cup of oatmeal 1 -2 teaspoons cinnamon Method: 1.Throw 1 cup of oats into a blender and blend for 30 seconds until fine, invert blender occasionaly. 2.Separate 10 egg whites and add to blender along with 1 to 2 teaspoons of cinnamon, blend for a further 30 seconds. 3.Add half of batter to fry pan on medium heat, when batter bubbles (about 1 minute) flip pancake and cook for a further minute. 4.Serve and enjoy Notes: 1.You can alter the ratio of oatmeal (1/2 cup to 1 1/2 cups) and eggs (7 to 14) to suit your goals. I found 1/2 cup of oatmeal is the nessecary minimun though. Feel free to substitute some eggwhites for yolks as well. 2.I like to top mine with real canadian maple syrup, you can also blend in fruit (strawberries, blueberries) to the batter as well.
